The perfect sandwich is tasty, quick to fix, and easy to eat. Grilled cheese usually earns my top honors, but I am trying to cut back on my butter consumption just a little. I still longed for the melty cheese, so I started microwaving a wrap. I started with half a sheet of lavash (an unleavened bread- you can substitute tortilla). I ripped a piece of provolone in half and put both halves on the bread. I thinly sliced a perfectly ripe farmers market tomato and chopped up some basil from my little pot of herbs.
I threw both on top of the cheese. I drizzled just a bit of olive oil and added a couple of grinds of salt and pepper. Then, I rolled it up and popped it into the microwave for a mere 20 seconds. Aaah... fresh, fast, and fabulous.
PS I have been making this with a variety of herbs and cheeses. Use whatever you have on hand.
